Potato Leek Soup

This soup was served as a part of the  Old Time Oktoberfest  meal.
1 lbs (about four) Yukon gold or similar potatoes
1 lbs (2-3) leeks, soaked, washed, cleaned
1 lbs carrots, cleaned
16 oz chicken stock (vegetable stock acceptable for veg/vegan)
2 bay leaves
1 sprig time (or 1 tsp dry ground)
1 sprig tarragon (or 2 tsp dry ground)
Peel and cut potatoes to medium dice (1/2” on a side). 
Rondelle (cut crosswise into flat, cylindrical pieces) carrots and leeks to 1/2” thick. 
Cut onions to small dice.
Add potatoes, carrots, leeks, onions, stock, and herbs to pot.
Simmer until vegetables are cooked to desired doneness and leeks separate.
Salt and pepper to taste.
