Maw-Maw's Potato Salad

My grandfather made the best potato salad in the world. Seriously. I would stand in the kitchen and eat it straight out of the bowl until it was all gone. (Then, of course, blame the crime on my dad.) When I was in college, my grandfather told me that he used a recipe he'd learned from his mother, a woman we all called Maw Maw. So here it is, Maw Maw's potato salad. Don't eat it all at once.

  • Two large baking potatoes
  • 1/2 sweet yellow onion, diced
  • 1 cup chopped celery
  • 1 cup chopped sour pickles
  • 1 cup mayonnaise
  • 4 hard boiled eggs
  • 1 tsp paprika
  • 1 tbs dill
  • 1 tbs sour pickle juice (or to taste)
  • Salt and pepper to taste

  1. Boil the potatoes until tender, then peel and cool.
  2. Add the potatoes and chopped onion, celery, and sour pickles to a large bowl. 
  3. Gently toss in the mayonnaise. Be careful not to break the potatoes.
  4. Cut the boiled eggs into quarters and add to the bowl
  5. Add sour pickle juice, dill, salt and pepper, and toss until the mixture has the desired texture and taste.
  6. Sprinke paprika on top of the finished produce and put in the fridge to chill. You can eat it immediately, but it will taste better after a few hours in the fridge.
