Lamb Feta Quiche

During our Happy Food dinner, we feasted on all the foods that are traditionally fasted from during Lent. The traditional Lenten fast included eggs, dairy, and meat. So on Easter morning, the eggs were piled up and ready to be enjoyed. This recipe combines several Lenten fast foods into one delicious slice of goodness.


  • 1 pie crust, 9” (you can make your own or use a frozen one)
  • 1/2 lbs ground lamb
  • 4 oz feta, crumbled
  • A small bunch of spinach, roughly chopped (amount as desired, optional)
  • 1 cup cream
  • 3 eggs


  1. Score and blind bake pie crust.  
  2. Brown lamb, seasoning as desired (salt, pepper, and oregano work well). 
  3. Combine lamb, feta, and spinach in pie crust. 
  4. Combine eggs and cream and blend well (a blender works well for this). 
  5. Pour egg and cream mixture over ingredients in pie crust. 
  6. Bake at 350 for 30 minutes or until center is soft set. 
  7. Remove to cool and firm before serving.
