Fall Salad

One of the best parts of fall in Texas is the fresh, crunchy salads. Our weather is just cool enough for greens to flourish during after the summer heat finally breaks. This salad is best using greens as fresh and local as possible. This was a part of our Family Style Fall Dinner .
Salad ingredients:
Lettuce greens (pick your favorite variety)
1 apple, sliced
1/2 cup pecans (or candied pecans, if you prefer)
1/2 cup dried cranberries
4 oz goat cheese
Dressing ingredients:
1/4 cup apple cider vinegar
3 tbs honey
1 tbs dijon mustard
1 clove garlic
1 cup grapeseed oil
Salt/pepper to taste
Wash salad greens and toss together in a large bowl.
Add the vinegar, honey, and dijon mustard to a small cup or jar.
Cut a clove of garlic into small pieces and add it to the jar.
Add the grapeseed oil.
Using an immersion blender, blend the dressing until the garlic is completely ground up.
Taste, and add salt and pepper as necessary.
Toss the salad greens in the dressing.
On top of the greens, add the pecans, cranberries, and apple slices. Crumble the goat cheese on top.
