​Hot Crab Dip

This is not what we would call healthy. But it is delicious. And sometimes, you just need a little more delicious in your day.

  • 1 yellow onion
  • 1 green bell pepper
  • 2 cloves garlic
  • 1/4 cup chopped green onion
  • 1/4 cup chopped parsley
  • 1 cup mayo
  • 1 lb cream cheese
  • 1 tsp sea salt
  • 1 tsp white vinegar
  • 1 lb crab
  • 1/2 package saltine crackers
  • 1 stick of butter, unsalted

  • Dice onion, bell pepper, and garlic. Add olive oil to a pan over low heat. Once the oil is hot, add the onion and bell pepper. Slowly cook until the onion begins to turn translucent and slightly brown. Add the garlic and cook 1 more minute. Remove from heat and set aside.
  • Mix together cream cheese, mayo, parsley, green onion, salt, and vinegar.
  • Add the onion mixture to the cream cheese and mix together.
  • Mix in the crab.
  • In the saute pan, melt the stick of butter with half of the saltines. Add that mixture to the dip.
  • Transfer to an oven-safe dish, and crumble the other half of the saltines on top.
  • Bake at 350 for about 30 minutes, or until hot.
  • Serve with crackers or toast.
